
How to make the perfect biscuit.I wanted something with whole wheat flour in it that wouldn’t double as a rock once out of the oven. I wanted a nice and fluffy texture with a melt-in-your-mouth taste. Yet, no recipe I tried seemed to fit this bill.
Then, I ran across this recipe…
Flakey, Buttery Biscuits
2 c. white flour
1 c. whole wheat flour
2 Tbsp sugar
4 1/2 tsp baking powder
3/4 tsp cream of tartar
1/2 tsp salt
3/4 c. cold butter
1 egg
1 c. milk
In a bowl, combine the first 6 ingredients. Cut in the butter until crumbly. Combine egg and milk and stir into the crumb mixture, just until moistened. Turn onto a floured surface; knead 10-15 times, and roll out to 1″ thickness. Using a biscuit cutter or a glass, cut out 2½” circles. Place on a greased baking sheet and bake at 450° for 10-15 minutes or until golden brown and gorgeously flaky!
Yields: 1 dozen melt-in-your-mouth biscuits

They DO look yummy! My favorite are the multi grain ones on the list of recipes that I emailed to you for the multi grain flour mix. They are lovely and fluffy considering all the whole grains in there! My kids LOVE them too.
