I have a massive amount of whole wheat pastry flour on hand, so I thought it would be a good idea to make up some whole wheat pancake mix and keep it in the downstairs refrigerator. I used to do this all the time, but when life gets crazy, homemade mixes are the first thing to go.
You can use regular whole wheat flour, or even white flour in this recipe if you like.
Whole Wheat Pancake Mix
8 c. whole wheat flour (I used pastry flour from Azure Standard)
3/4 c. sugar (I used sucanat from Azure Standard)
2 2/3 c. dry milk powder
7 Tbsp baking powder (I use aluminum-free)
4 tsp salt (I use sea salt)
Mix well and store in refrigerator or freezer. (I store mine is a big plastic container I got years ago at WalMart.)
To make pancakes:
Be sure and label the container!
3 c. mix + 2 eggs & 2 c. water
We make our pancakes on a large griddle. I try to get 2 pancakes per person made before calling anyone to breakfast, but I’m lucky if this actually happens!

Tomorrow, I’ll tell you how I used this recipe and others to put together an easy menu for my mother-in-law to make while we were away this past weekend.

Thank you for sharing! So even though you do the Trim Healthy Mama book you still eat wheat? That has been what has held me back from doing more of it, because I don’t have a problem eating some whole wheat and drinking milk….just curious what your thoughts were! 🙂

I’m hoping to do a post on this soon, but here’s the short answer. I feed these to my kids. I typically don’t eat pancakes in the morning because they mess w/ my blood sugars. THM has been great for keeping my blood sugars balanced, but I’m not a 100% THM person. I do deviate, mostly in the evening when my body has time to readjust overnight. I do eat wheat still, just in moderation.

1 batch feeds us just fine, so I’m guessing there are about 15-18 pancakes. I wasn’t here the last time these were made, so I’m not 100% sure.

I have a similar all-in-one mix recipe that makes pancakes/waffles, muffins, cookies, and biscuits. I make a double batch of mix using quick oats for 1 and whole wheat flour for the other and store it in my big tupperware canister. Because it is about 20 cups of mix it lasts a good month depending on how much I use the mix vs. cooking from scratch. I have even used the homemade mix with sourdough starter to make extra yummy biscuits, pancakes, etc!

Just curious as to why this needs to be stored in the refrigerator or freezer? I don’t have a ton of room in my refrigerator most of the time, and wonder why I can’t store the dry ingredients mixed together just in a storage container in my cupboards?

This might just be a case of me doing what someone else told me to do without really knowing why! lol Actually, I think the idea is that it will keep long term if stored that way.
