Tear half of the bread loaf into bite-sized pieces and place in greased 10x15 or 9x13 casserole dish.
Arrange cream cheese cubes evenly on top of bread. Add apples evenly over everything. Tear remaining loaf into bite-sized pieces and sprinkle over the top of the casserole dish.
Beat eggs, milk, and cinnamon and pour evenly over the bread mixture. (If making ahead of time, stop here, cover, and refrigerate.)
To make the maple glaze, combine maple syrup, butter, and brown sugar in a small saucepan, and bring to a boil. Pour the maple glaze evenly over the top of the entire casserole, paying special attention to covering any bits of crust with the glaze.
Bake at 350° for 35 minutes or until done in the center.
