In a medium bowl, pour boiling water over oatmeal and let stand for 5 minutes. Do not drain.
In a larger bowl, combine the dry ingredients.
Peel and core the apples and chop them coarsely.
Add apples and nuts to the dry ingredients.
Next, add eggs, milk, and melted butter to the dry ingredients.
Then, slowly stir in the oatmeal and mix well.
Pour 1/2 cup of batter onto a hot griddle or skillet. I like to add a bit of butter to the griddle or skillet first. Cook until bubbles form on top and then flip and cook until golden brown.
Serve with real maple syrup and savor the flavors of Fall!
