Autumn Pancakes

Fall flavors of apples, cinnamon, nuts, and oats!

Ingredients

  • 1 cup oatmeal
  • 3 cups boiling water
  • 3 cups flour
  • 4 tsp baking powder
  • ½ tsp salt
  • 6 Tbsp sugar (I like to use sucanat)
  • 1 tsp cinnamon
  • 2 large eggs, beaten
  • 2 cups milk
  • 2 large apples (I like Granny Smith's or Honeycrisp)
  • ½ cup walnuts or pecans, chopped (optional)
  • 6 Tbsp butter, melted

Instructions

  • In a medium bowl, pour boiling water over oatmeal and let stand for 5 minutes.  Do not drain.
  • In a larger bowl, combine the dry ingredients.
  • Peel and core the apples and chop them coarsely.
  • Add apples and nuts to the dry ingredients.
  • Next, add eggs, milk, and melted butter to the dry ingredients.
  • Then, slowly stir in the oatmeal and mix well.
  • Pour 1/2 cup of batter onto a hot griddle or skillet. I like to add a bit of butter to the griddle or skillet first. Cook until bubbles form on top and then flip and cook until golden brown.
  • Serve with real maple syrup and savor the flavors of Fall!
