Creamy Sausage Vegetable Soup

A hearty soup perfect for a winter day.

Ingredients

  • 1 qt. chicken broth
  • 1 pkg. frozen mixed vegetables
  • 2 potatoes, chopped
  • 1 lb. sausage, browned
  • 1 pkg. Creamy Potato Soup Mix
  • whipping cream (as much as you desire, or use something lighter like milk or half and half)
  • salt & pepper (to taste)

Instructions

  • In a large saucepan, cook frozen vegetables in chicken broth until tender.
  • Meanwhile, brown sausage and drain fat.
  • Add potato soup mix to vegetables and broth (add more water if needed).
  • Add browned sausage.
  • Add whipping cream.
  • Serve immediately with a crusty loaf of bread.
