Creamy Cornbread Corn Casserole

Ingredients

  • 1 stick butter
  • 1 onion chopped fine
  • 1 green pepper chopped
  • 2 eggs well beaten
  • 1 can whole kernel corn
  • 1 can cream-style corn
  • 1 box (8.5 oz) corn muffin mix
  • 8 oz sour cream
  • 2 cups mild cheddar cheese grated

Instructions

  • Preheat oven to 375°.
  • Saute' onion and pepper in butter.
  • In a large bowl, fold both cans of corn into beaten eggs.
  • Add corn muffin mix to egg mixture.
  • Pour corn mixture into well greased 9x13" pan.
  • Stir in onion, pepper, butter, sour cream, and grated cheese.
  • Bake at 375° for 40 minutes, until set and golden.
