Many years ago, I found myself longing to learn the all-but-forgotten domestic arts. I would read Christian novels set in the “olden days” with the hopes of gleaning information on baking and keeping house that seemed to no longer be available to my generation. I endlessly bothered anyone and everyone who made jelly or pickled okra or knew how to make soap, begging them to teach me. (By the way, I’m still good at begging others to teach me things.) But one item of information I longed to know remained elusive.How to make the perfect biscuit.I wanted something with whole wheat flour in it that wouldn’t double as a rock once out of the oven. I wanted a nice and fluffy texture with a melt-in-your-mouth taste. Yet, no recipe I tried seemed to fit this bill.
Then, I ran across this recipe…
Flakey, Buttery Biscuits
2 c. white flour
1 c. whole wheat flour
2 Tbsp sugar
4 1/2 tsp baking powder
3/4 tsp cream of tartar
1/2 tsp salt
3/4 c. cold butter
1 egg
1 c. milk
In a bowl, combine the first 6 ingredients. Cut in the butter until crumbly. Combine egg and milk and stir into the crumb mixture, just until moistened. Turn onto a floured surface; knead 10-15 times, and roll out to 1″ thickness. Using a biscuit cutter or a glass, cut out 2½” circles. Place on a greased baking sheet and bake at 450° for 10-15 minutes or until golden brown and gorgeously flaky!
Yields: 1 dozen melt-in-your-mouth biscuits

They DO look yummy! My favorite are the multi grain ones on the list of recipes that I emailed to you for the multi grain flour mix. They are lovely and fluffy considering all the whole grains in there! My kids LOVE them too.
