It’s summertime and the living is easy…or at least the living is HOT!
Remember our Community Garden? Well, the harvest is rolling in! One way we are using up the produce is by battering the veggies and frying them.
The batter I’m using is a recipe I received from Ty’s Granny 14 years ago. It’s a really simple recipe that can easily be tweaked to fit your liking.
Easy Vegetable Batter
3/4 c. corn starch
1/4 c. flour (I use whole wheat)
1/8 c. corn meal
1/2 tsp salt
1/2 tsp lemon pepper
1/4 tsp garlic powder
1 tsp onion powder
1/4 tsp chili powder
Add 1 egg, slightly beaten
and
enough buttermilk, milk, or water to make a stiff batter
Add oil to pan to fry. Cut veggies and pat dry. Coat both sides of veggies with batter and fry ’em up!

Amy says
I’ve had fried pickles in a restaurant and they were yummy! Last year, we fried and pickled green beans! Now THAT was interesting!

Now that does sound interesting! I was raised by a Mom from the south so we believe in frying everything! LOL Someday I’ll save up all of my points and have one of those fried candy bars! Okay, points for two days! lol

I am excited to have found this recipe. I love fried veggies. Thank you for sharing.
Is that a cast iron pan that you were using?
Jessica
Amy says
Yes, it is cast iron! 🙂 Pretty much all we cook in is cast and stainless steel.

eww, I am so excited! I love fried tomatoes. and pickles. yum! I need to go to the farmers market. I wonder if I can batter and then freeze for later. Thanks for sharing.

I’ve never tried battering ahead of time, but I did recently blanch some eggplant and zucchini and freeze it in the hopes of frying it later.

Pickle recipes…..
Okay, this is not a recipe but these are good..There are packages at Walmart, Kroger probably any grocery store for bread n butter pickles and also for kosher pickles, just follow the directions and they are really good. The following is a recipe that’s been in our family for over 30 years and we LOVE it, make it year after year. They are brine pickles and we call them “Brenda’s Pickles” since that is the aunt we got them from:
Place 2 or 3 buttons of garlic in the bottom of a jar, sprinkle dill in on top, wash and pack cucumbers in jars. Then heat this solution…..3 pints of water, half cup of salt, half a pint of vinegar…bring this to a boil and then put it into jars. This makes 4 quarts.
We love to eat these in the winter with a big bowl of homemade chilli.
Amy says
Do you process these in a water bath?
Rebecca L. says
No, we never have. In fact, mom and my oldest daughter made these pickles about a month ago and we have already ate 2 quarts. They pickle pretty fast. The batch my daughter helped make, they didn’t use buttons of garlic, they just covered the bottom with the already-prepared garlic from a jar (I bought a big jar of it at Sam’s but I’ve seen it at Walmart too).
