Soup is the typical New Year’s Day fare around here. Here’s one of our favorites:
Creamy Chicken Salsa Soup
2 large cans Cream of Chicken soup
2 large cans of water or milk
4 chicken breasts, cooked and shredded
1 jar salsa
1½ c. corn
Garnish with: sour cream, shredded cheese, tortilla chips
Put all ingredients in crock pot on low for 4-6 hrs.

Happy New Year, Amy!! This recipe sounds good. . .quick question: does it turn out too spicy? My little ones are not fans of spicy food, but this sounds SO GOOD! Just wondering…
Joy to you in 2012!

Happy New Year! That soup sounds good. What size jar of salsa do you use?

YUM! This is lunch! I had everything in the pantry. Since it’s so cold here in the deep south, it’s perfect! The only extra thing I added was a can of raised black beans.

Sounds perfect!
