This little number has fast become a family favorite, so I thought I’d share. (the original recipe appears in Whole Foods for the Whole Family Cookbook)
Greek Pitas
2 lbs ground beef
1 medium onion, chopped
1 Tbsp wheat germ
1 Tbsp sunflower seeds
1 bay leaf
2 Tbsp dried mint
2 Tbsp oregano
5 Tbsp plain yogurt
6 rounds whole wheat pita bread, cut in halves
Brown ground beef with onion in skillet, stirring frequently; drain. Add wheat germ, sunflower seeds and herbs. Simmer for 30 minutes. Stir in yogurt just before serving. Spoon into pita pockets.
