AKA: Autumn Casserole
(because what could be more representative of the season than sweet potatos and apples?!)

1# sausage
3 medium raw sweet potatoes, peeled and cut into chunks
3 medium apples, peeled and sliced
2 Tbsp flour
2 Tbsp sugar
1/2 tsp cinnamon
1/2 tsp salt
3/4 c water
Brown sausage, break into pieces, and drain fat. Arrange sweet potatoes, apples, and sausage in 2 qt. casserole dish. Combine the remaining ingredients and pour over the above. Cover and bake at 375 for 50-60 minutes or until potatoes and apples are tender.

My almost-3 daughter is sitting in my lap as I read. She pointed to the casserole and the butterflies top of your page and said it’s food for the butterflies. 😉 Not sure if butterflies like sausage swt. potato bake but according to her they do. 😀

This wouldn’t really feed your family would it?! How many would you say this feeds? Having a large family myself, I’m betting this would feed 4. 🙂 Do you double or triple this? What would you suggest serving it with (if anything)?

It would not feed my family now, but when I posted the recipe backhttps://raisingarrows.net/wp-admin/edit-comments.php# in 2009, it did (with sides, of course). At the time, I would have had 6 people eating with 2 of those being fairly young. I’m planning to make this again soon, so I’ll try to update the amounts with what we ended up needing. 🙂
