Every year for Thanksgiving, my mom made a wonderfully tasty cranberry salad. Oh, how I loved that stuff. It was so much more appetizing than the jellied cranberry stuff they sliced up at the school cafeteria (you could still see the rings from the can!)
Finally, last year I asked for the recipe and was delighted by how simple it was to make!
The funny thing is, the other day I was at my mother-in-law’s house and she was excited about some Cranberry Celebration Salad she had purchased on sale at a local supermarket because it is usually quite expensive. I took one bite and realized it was the same thing as my mom’s salad! The best part of this is that I’m able to pick up all the ingredients I need for this festive salad at Aldi right now for super cheap!
So, if you like a little tart and a little sweet, and a whole lot of cranberry, try out this yummy holiday recipe (we make it for Thanksgiving and Christmas and typically double this recipe).
Cranberry Celebration Salad
1 can jellied cranberry sauce
1 can whole cranberries
1 small can crushed pineapple
1/4 c chopped walnuts
Mix together, chill, and serve!

My family has a similar recipe, but we also put in apple and orange pieces as well. It really is refreshing and delicious. You are right that is is so much better than the canned stuff. I really can’t bring myself to eat that.

Amy, do you mean by a can of whole cranberries you can buy canned cranberries other than sauce? I’ve never seen them before that’s why I’m asking. I usually buy fresh cranberries in the produce section to make my sauce with.

Yes, at this time of year, you can buy them in a can too, but you can use the fresh too. I was just going for quick. lol

I made the cranberry salad for Thanksgiving this year. It was a hit and will be added to the menu for future Thanksgivings. I did make a slight change though, I cooked whole cranberries (according to the package directions), and once they had cooled, mixed them in with the jellied cranberry sauce and the crushed pineapple. I also doubled it for a crowd 😉

Do you have any idea how one would make this with whole fresh cranberries? I’ve wanted to try it for years, but they just don’t carry canned whole cranberries here, even in the holiday season. 🙂

The cranberry sauce I made is sort of like a cranberry jam, so it has bits of cranberry in it. Does that make sense? And Happy Thanksgiving to you!
